  1. Use a non-stick spray to coat the inside of your slow cooker. Layer the potatoes, carrots, celery and onions on the bottom. Place the beef roast on top of the vegetable layer. Pour the stock or beer over the roast and then sprinkle the dried thyme, salt, and pepper over the roast. Tuck the bay leaf into the liquid near the bottom of the roast. Cook on low for 8 hours.
